fermentation vessel is the three-piece fermentation lock. Older models contain three bulbous chambers allowing for a broader range of pressure equalization.

There are two pictures, one of which appears to be the 'older model' with two sets of three bulbs.

It's not clear which is which, nor how having three chambers allows for a broader range of pressure equalization.
