Fadge

Fadge is an Irish (Ulster) potato cake or flat farl, often served fried as a part of a cooked breakfast (or Ulster fry).

- Mash one pound of cooked potatoes (make sure there are no lumps)
- Sprinkle with salt and drizzle with the butter
- Knead in 3/4 cups flour to make pliable dough
- Roll out to about 1/2" thick and cut into round patties about 4" across
- Brown on each side 3-4 minutes or until golden
