Fadge

Fadge is an Irish (Ulster) potato cake or flat farl, often served fried as a part of a cooked breakfast (or Ulster fry).

  1. Mash one pound of cooked potatoes (make sure there are no lumps)
  2. Sprinkle with salt and drizzle with the butter
  3. Knead in 3/4 cups flour to make pliable dough
  4. Roll out to about 1/2" thick and cut into round patties about 4" across
  5. Brown on each side 3-4 minutes or until golden
