Főzelék

Főzelék is a type of thick Hungarian vegetable dish. It looks similar to a purée but is simply cooked, not mashed, into its semi-liquid consistency. Though very much like a thick soup, in Hungary, it is considered an altogether different food than clear soups (leves), as it is never cooked with meat. Furthermore, soups are only served as a first course, whereas főzelék is often eaten as the main course for lunch.
Főzelék can be made with a variety of ingredients including cabbage, potatoes, tomatoes, peas, lentils, squash, or spinach, but vegetables are usually puréed through cooking, not mashed, and neither flour nor corn-starch are usually added. It is often topped with pörkölt, a hard-boiled egg, a fasirt, and other deep-fried foods.
