From Wikipedia, the free encyclopedia

Also known as red clover, alfalfa (trifolium pratense) is an introduced species to North America. It provides an excellent source of nectar for honey producers, and is also a nutritious feed for cattle. In its early growth stage, it is also a tasty and tender addition to a "wild salad", though its use later in the season is discouraged; as the plant ages, it begins to produce toxic components. Alfalfa blooms from May through August, and its red-purple blossoms and leaf chevrons are highly visible and readily identifiable.
