Dragons Breath is a regional cheese from Nova Scotia, Canada. It is a soft blue cheese. Its name is derived from the incorporation of garlic and white pepper.[dubious ] Dragons Breath is rarely eaten by itself, and most commonly used in dips or sauces. Dragons Breath has a creamy texture, but spicy due to the garlic and pepper.
The Cheese is produced by Willem van Denhoek at That Dutchman, in Upper Economy, Nova Scotia. For more information, refer to The Definitive Guide to Canadian Artisanal and Fine Cheese (Whitecap Books 2006).
