Disodium glutamate (DSG, Na2C5H7NO4) is the sodium salt of glutamic acid.

Monosodium glutamate (MSG) is put into a basic environment, it is neutralized by the alkali. In the presence of sodium ions, this reaction will form DSG.
In this reaction, a sodium ion replaces hydrogen on the second carboxyl group in glutamic acid.

DSG has an odor of ammonia.
