Gary Fish established the Deschutes Brewery & Public House as small brew pub in 1988 in downtown Bend, Oregon and named it after the wild & scenic Deschutes River. The brewery expanded in 1993 and now has a brewing facility with two brew houses so it can brew enough beer to distribute beyond Bend. The brewery is one of the top breweries in the Northwest and distributes its beer in thirteen western states. Bend's original brew pub, Deschutes Brewery still brews most of the beer it pours at the pub on the 12-barrel system where it all began.

Its most popular beers include the Black Butte Porter, Mirror Pond Pale Ale, Obsidian Stout, Bachelor ESB, and Cascade Ale. Obsidian Stout is ranked #89 on BeerAdvocate's Top 100 American Beers list.[1] Its beers have won numerous awards at various beer competitions. One of the more notable awards came in 2002 when the Deschutes Brewery won two medals at the Brewing Industry International Awards--a gold for the Mirror Pond Ale and a silver for the Black Butte Porter.[2]

A Deschutes brew pub opened in the Pearl District of Portland, Oregon in May 2008.

In April of 2006, the Deschutes Brewery replaced Quail Springs IPA, its English-style India pale ale, with Inversion IPA, an American Northwest-style India pale ale, as its year-round IPA.
