A Dark and Stormy (or Dark 'n' Stormy) is an alcoholic highball style cocktail popular in many British Commonwealth countries, such as Australia and Bermuda. It consists of dark rum and ginger beer over ice. The local rum is usually utilised, for example, Bundaberg in Australia or Goslings in Bermuda.

In Bermuda, Dark 'n' Stormy is a registered trademark of Gosling's Brothers Limited. [1]. It is described as "Bermuda's National Drink".

In Queensland, Australia, Bundaberg Distilling Company Pty Ltd, distillers of Bundaberg Rum have produced a pre-mixed version of the Dark and Stormy since 1993. It is sold in stubbiesand 375ml cans. [2] The ginger beer component is produced locally by Bundaberg Brewed Drinks Pty Ltd. [3]

For a traditional Dark 'n' Stormy, the ginger beer should not be Jamaican, as it is often over-spiced with cayenne and does not provide the citrus notes characteristic of the original Bermudian mixed drink. Barritts, a Bermudian brand of ginger ale, has the essential bite without a burn, and is almost always used as the base for the Dark 'n' Stormy at bars and restaurants in Bermuda. [4] The trademark only allows it to be made with a measure (1.5oz) of Black Seal Rum and ginger beer to taste. It is optionally accompanied by a slice of lime.
Bundaberg Brewed Drinks gives the following recipe for a Dark and Stormy:
Ingredients:
60mL Dark Rum, Bundaberg Ginger Beer, 1 slice of Lime, Ice.
Instruction:
Pour the rum into a glass over ice. Pour the Bundaberg Ginger Beer over it. Squeeze in the lime wedge and drop it in. [5]
Dark 'N' Stormies can also be made with Golden Rum, for example Appleton Estate, and can also be made with ginger ale.
