Croglin cheese, In 1979 Carolyn Fairbairn from Thornby Moor Dairy, Thursby Cumbria started making cheese to use up surplus milk from her small herd of goats. Within a year, production of her Cumberland Farmhouse began using cows milk from a neighbouring farm. Production has slowly increased year by year and caused her move to a larger dairy with a cheese shop, which has given space to store cheese and showcase her range of new-wave Cumbrian cheeses. The cheese's reputation rests on the strength of her cow's milk 'Cumberland Farmhouse' and goat's milk Allerdale.
One of the latest creations from Thornby Moor Dairy is Croglin cheese. The rich, sweet and smooth bodied unpasteuried ewe's milk develops a delicately flavoured, firm but smooth centre, while the rind adds a contrasting nutty texture and finish.
