Coffee High School has the following clubs: Anchor Club, Art Club, Campus Revolution, 4-H, FCCLA, Debate Team, Drama Club, Epiphany, Fellowship of Christian Athletes, FFA, Future Business Leaders of America, Future Georgia Educators, Health Occupation Students of America, Inter-Club Council, Key Club, Latin Culture Club, Leo Club, Matrix, National Art Honor Society, National Honor Society, Navy JROTC, Science Club, Step Team, Student Council, Technology Students Association, The Chariot, The Lance, Vocational Opportunities of America Club, Y Club, and FDA.

Coffee High School has the following sports teams: Baseball, Basketball, Competitive Cheerleading, Spirit Cheerleading, Cross Country, Football, Golf, Soccer, Softball, Swimming, Tennis, Track & Field, Volleyball, Winter Guard, and Wrestling.

In 2001 the school concluded a devisive search for a new football coach which ended in the return of Bonwell Royal. [3] Royal retired in 2005, [4] and the state legislature passed House Resolution 306 to commend him for his 34 year career, 26 of which were with Coffee High School.[5] Specifically mentioned in the resolution was the 2002 Region 1-AAAAA Championship. [6]
