I think that the Guinness reference is a bit too much. While it may be true that people are wont, of course, especially Dubliners, to eat a coddle before a night out, it doesn't necessarily mean that coddle is best served with Guinness. Water or a pint of milk can offset the saltiness of the dish more easily than Guinness. I'm a Dubliner from [1]Donaghmede; there's no doubt that Guinness was never served with coddle in my day. It's like saying that Toad in the hole is best served with a pint of bitter or that a Spanish omelette is best served with sangria. At least say, if I'm disagreed with regarding the above to a sufficient degree, that it is best served with stout, rather than a particular brand of stout. Many prefer Beamish or Murphy's...
