A tray of chicken balls, in the kitchen of Wonton Place, a Canadian Chinese restaurant in Thompson, Manitoba, Canada. According to the photographer (Flickr user: Chicken Ball!), this is what the chicken balls look like before they are cooked. Technically, they are deep-fried twice, but shortening is used the first time to solidify the batter, and then vegetable oil is used the second time to deep fry them completely (and cook the meat inside). In the end, they don't get that greasy, but the secret is in the batter.

Hello, I'm one of the thousands of volunteer editors at the English-language Wikipedia, where I write articles about various Asian foods. I just came across your very nice photo of golden-brown chicken balls, and I see that we don't yet have a good photo of chicken balls at the Wikipedia article about this food.

I wonder if you might consider allowing your photo to be uploaded to that Wikipedia article, as the representative photo for this dish. Some editors in the U.S. were recently doubting that this food even exists (since it isn't available in Chinese restaurants in the U.S.), so I think it would serve a great educational purpose.

As per Wikipedia's policies, the photo would need to be released under a "free" license such as the Creative Commons, meaning that the photo could be reused by anyone for any reason (including educational, commercial, or any other use), although it would be specified that credit is given to you and a link made to your Flickr page. Wikipedia is now the eighth most visited website in the world, so you'd probably get a lot of views.

Hello,

Yes, it will be fine with me if you want to use this photo, but keep in mind that these chicken balls are actually in their pre-cooked state - these bad boys are refrigerated overnight to let the batter settle, and then they are cooked fresh the next day as orders come in. The final product is a darker, crispier version than what you see here.
