Chana masala

Chana masala (also known as chole or chole masala) is a North Indian dish in which the main ingredient is chickpeas. It is fairly dry and pleasantly spicy with a sour citrus note. Popular mainly in the Punjab in northern India and in northwestern India, notably in the regions of Gujarat and Sindh (Pk). In the Gujarat and Rajasthani areas, it is commonly cooked dry, with tangy spices.

Along with chickpeas, the ingredients typically include onion, chopped tomatoes, turmeric (haldi), coriander seed, garlic, chillies, ginger and garam masala. It is suitable for vegetarians and vegans (when prepared without ghee).

In India, it is often eaten with a type of fried bread bhatura and is known as chole bhature. It is commonly sold by street vendors but also can be found in restaurants.

It is also widely enjoyed in countries outside of India. It is commonly available in Indian restaurants around the world and can be found prepackaged in supermarkets.
