When you create new categories, you should ensure that they match the existing conventions of their parent categories. I have nominated the above category for speedy renaming to Category:Japanese people of Mexican descent per the convention of Category:Japanese people by ethnic or national origin, which was established by discussion at Wikipedia:Categories for discussion/Log/2007 September 5#Category:American Japanese people and because the term "Mexican Japanese" is never seen in reliable sources for referring to Mexicans in Japan, only for general cooperation between the governments or corporations in Mexico and Japan (Find sources: Mexican Japanese — news, books, scholar).
