Brem

Brem is the traditional rice wine from the island of Bali. It is consumed and holds important use in temple ceremonies. Brem can be either white or red depending on the proportions of white and black glutinous rice used in production, very sweet to semi-sweet, and vary in alcohol content from 5% to 10%.

Glutinous rice is steamed for 4 to 10 hours and then allowed to cool. The cooled rice is then inoculated with Ragi tape and amylolysis begins. Following 3 days of conversion from rice starch to sugars a yeast culture is added and alcoholic fermentation begins.
