[edit] Edible or poisonous?

I suspect that this information was taken from the Ray Mears TV program this evening. The program said that roasting and leaching removed most of the oxalate but that there may be other toxins. They didn't actually eat it.

Have removed that section to this page pending further reference.


"Research has shown that one can render the roots edible by removing the poison by squashing the roots en washing these in water for several days. Usually this is done by putting the squash or pieces in a net and submerge this several days in a brook. Consequently roasting gives the root extra flavor."

The French WP mentions that young sprouts are eaten during spring in the South of France. Although quite bitter, they are not toxic. 195.68.39.189 (talk) 15:21, 17 April 2008 (UTC)
