Ashpal (or Ashbal) is the Gileki and Mazandarani equivalent of roe. Ashpal is consumed extensively in the Caspian provinces of Iran. It is mainly harvested from roach (Kuli in Gileki), bream (Kulmeh in Gileki), kutum (also known as "white fish"), or Caspian salmon; carp roe is also consumed on occasion. Ashpal may be eaten salted, cured, grilled, steamed, or as a salted custard.
