[edit] Surviving veterans of World War I
You are reading the chart incorrectly. The charts list the number of surviving veterans currently living in each country not how many are left surviving from that country (hence why Germany is still listed as having one veteran, even though the last one died on January 1). There are three Italian veterans remaining: Francesco Domenico Chiarello, Delfino Borroni and Lazare Ponticelli (who served for both France and Italy during World War I).
