Amber is the Mandarin Oriental Landmark Hotel's European haute cuisine restaurant. Richard Ekkebus is the current executive chef.
Amber's decor is designed by interior designer Adam Tihany and features a ceiling sculpture comprising of 4320 hanging brass tubes. Amber uses Bernardaud serving dishes, Christofle silverware, laguiole steak knives and Riedel O series wine glasses.
Amber is also renowned for using very exclusive ingredients, such as Castainy foie gras, Sarrade foie gras paté, Echiré butter. Amber's signature dishes include transparent Gillardeau oysters and cucumber ravioli; Anjou pigeon, green pistachio foam, minced leg samosa, turnips caramelized mellow grey shallots, banyuls and chocolate Emulsion; black truffle and foie gras sushi; and iced pandam leaf sabayon with ginger ice-cream and cashew brittle.
