Are they healthful? I thought acrylamide and various other chemicals produced by browning were carcinogenic and dangerous, but Roasted barley tea states that this chemical is healthful. Badagnani (talk) 18:53, 21 April 2008 (UTC)

Though they are both created during the browning of food, alkylpyrazines are quite different than acrylamide, chemically; so the health effects should be unrelated. I don't know if any research has been done concerning their potential health effects. -- Ed (Edgar181) 20:16, 21 April 2008 (UTC)
