Albóndigas

Albóndigas ("meatballs" in Spanish) are found in Sopa de Albondigas, a Mexican food dish. The meatballs have rice in them and the broth is usually chicken. Vegetables such as onion, carrots, potatoes, squashes, chayote and seasonings such as cilantro,mint, salt and garlic are often used.
When mixing the meat with rice, raw eggs can also be added for when the meatballs are dropped into the boiling pot they immediately stiffen and don't break apart.
In the Mexican Northwest, warm rolled tortillas with mayonnaise and salsa are commonly used for accompanying.
