Ackee and saltfish is a traditional Jamaican dish, often considered Jamaica's "national dish." This meal has spread to other countries throughout the Jamaican diaspora.

To create this dish, salt cod is sautéed with boiled ackee, onions, peppers, tomatoes, and herbs such as black pepper and pimento. It may be garnished with crisp bacon and fresh tomatoes.

In the United Kingdom and United States, ackee and saltfish using fresh ackee is a rarity, instead it is generally made with canned ackee. The most popular brand of canned ackee is Jamaica Sun, due to its consistency and quality, but other brands include Walkerswood and Grace.

Well-prepared ackee has the texture of scrambled egg, and should not be overcooked or mashed.
