Gruenkern
Gruenkern is produced in a relatively small area in Southern Germany around the town of Boxberg. In short: gruenkern is roasted spelt and you can make fantastic dishes with it!!
Gruenkern was invented as a response to hunger. In years of heavy thunderstorms with hail the stalks were beaten to the ground and were in danger of rotting. In order to rescue at least some grain people would harvest spelt in a green condition. They took it home and roasted it in their stove. When they ground the roasted grain they put it in soups, made hamburger-like patties or mixed it with flour to make bread. That was the birthday of gruenkern, the birthday of the best vegetarian hamburger you can imagine!
