Whoever gave the linguistic definition of text, is wrong, he has mistaken text for language. Your differenciation between "a system as the ability of the speakers to communicate using verbal and gestural signs" and "text being understood as the product of this ability" is more fitting for the language-definition as separated into "langue" and "parole" (french) like deSaussure did.

[edit] Objection to Transfer to Wikdictionary

We have, in Languate, the following:

• Letters (of the alphabet)
  • Words forming the Vocabulary
    • Sentences forming Statements
      • Paragraphs forming collections or sets of related sentences]]
        • Chapters or [[Part]s forming sections of Books
        • But [[Text], which includes [[Book], is to be excluded from the Dignity of inclusion within Wikipedia? I stronly protest! How can one explain Philology, Semiotics, Hermeneutics, Apologetics without it. And what is the Bible, if not a Text?
          • And what kind of text is the Talmud?
            • Finally, is not Wikipedia itself not a single Text?
