Sorrel soup

Sorrel soup is a soup made from water, sorrel leaves, salt and egg yolks. It is known in Polish, Russian and Yiddish cuisines under names spelt variously schav, shchav, shav, shtshav, derived from the Polish name szczaw for sorrel.

It is a kosher delicacy often served cold with sour cream. It is characterized by its particularly salty taste and pungent aroma. In Russian cuisine it may be prepared using any kind of broth instead of water and may be served either hot or chilled.
