Sorry to have to block you last night, and sorry I didn't respond to your email straight away. Anyway, all the topics you suggested in your email sound like fine things to add to Wee Waa, New South Wales, especially if you can cite sources (this feels very hard when you know your topic). You could look at Feature Article guidelines to see what an "Excellent" article can look like. I don't know if there are any example of rural Australian towns, but there are several example suburbs like Waterfall Gully, South Australia, also mostly developed by someone who lives there.
