Adapted? This seems like a fairly long quotation, and pretty much exclusively. Is it a translation?

Shouldn't there be 63 doublings to yeild a sum of 64 numbers?

Yes, there are 63 doublings. The summation of all the 63 doublings and the initial single grain of rice gives 2^64 - 1. See Geometric_progression#Geometric_series Rotiro

In the Shahnama and in all Persian texts Hind refers to the kingdoms, regions, etc. that bordered the Indus. These areas where now and again Persian satrapies. These included provinces like Balochistan but also included areas of what is now Northern Afghanistan/Pakistan. That is the area of the Gandhara civilization where among other things Sanskrit grammar was written by Pannini.
