Samgyupsal is a popular Korean dish. It consists of pork bacon cut from the belly, served in the same fashion as galbi. Sometimes it is cooked on a grill with kimchi troughs at either side. The juices/excess fat from the meat cook the vegetables in a way that the vegetables acquire all the oil needed from the meat to cook themselves, giving it a distinct, meaty taste. Commonly grilled with garlic, potatoes and onions, it is dipped in ssamjang/gochujang/doenjang and wrapped in ssangchu. Also very common to eat with big and spicy pieces of goachu (green pepper) for a spicy taste.
