Sajji

Sajji is a native dish of the desert province of Balochistan, Pakistan. It consists of whole lamb, in skewers (fat & meat intact), marinated only in salt, stuffed with rice and baked over coal. Sajji is said to be done when it is half cooked. It is served with Kaak, (another native item) a special bread or roti/naan baked in furnace whilst being wound over a stone. Though Sajji is favourite among the natives of Balochistan, where most of the people are nomads, it does not gets favoured among the city dwellers automatically mainly due to its bland taste. Hence the Karachi & Lahore equivalent of the Sajji is made using chicken and a lot of other spices and wholly cooked.
