- This article is about the wine storage process. For other uses of Riddling, see Riddling (disambiguation).
Riddling (remuage in French) is a method of consolidating sediment in wine for its removal. Traditionally, bottles are stored cork down at a 45 degree angle for a period of several weeks. They are given a series of abrupt shakes and twist periodically (around once every one to three days) which causes sediment to detach from the bottle and collect near the cork. Riddling racks are usually used for champagne. Excellent overview of the process [1] found here.
Many stores now sell riddling racks simply for decorative storage of wine.
