Rice noodles

Rice noodles are noodles that are made from rice. Their principal ingredients are rice flour and water, though sometimes other ingredients such as tapioca or corn starch are also added.

Rice noodles are most commonly used in the cuisines of East and Southeast Asia, and are available fresh, frozen, or dried, in various shapes and thicknesses. In Southern India and parts of Sri Lanka, Singapore, Malaysia, Idiappam, a type of rice noodles in a soft and tender form, as against the dried from of Chinese noodles, is sold and consumed. Another rice noodles variety popular in parts of Tamil Nadu is Sevai, which is also called Santhakai in the Coimbatore region of Tamil Nadu.
