Potbelly Sandwich Works is a chain of restaurants that sells submarine sandwiches in the USA. Its name is derived from potbelly stoves common in the late 19th century. The company is headquartered in the tower of Chicago's Merchandise Mart.

Potbelly Sandwich Works began in a Chicago antique store in 1977 (today, all locations retain an antique store theme) and has been offering toasted sub sandwiches longer than all its competitors,[citation needed] including Subway, Quiznos Sub, and Blimpie. There are now over 100 Potbelly locations in Illinois, Indiana, Michigan, Minnesota, Ohio, Texas, Maryland, Virginia, Washington, D.C., and Wisconsin. Potbelly Sandwich Works expanded to locations outside of the Chicago area in 1996 after being purchased by Bryant L. Keil. [1]

The menu features a variety of sandwiches that are all served toasted on regular or wheat bread. Potbelly locations in Illinois, Indiana, and Wisconsin began offering salads as well in February of 2007. All sandwiches can be ordered "skinny" style in which one third of the bread is cut out. The menu also includes salads as well as a variety of shakes, malts, and side dishes. Most Potbelly restaurants also feature live music during their lunch hours.

In addition to their ordinary menu, Potbelly's also has a "hidden" menu.[citation needed] Three sandwiches that are on this menu include the BLT, the "Cheeseburger," and the "Burrito."
