Pecorino Sardo

Pecorino Sardo is a firm sheep's-milk cheese from Sardinia, Italy. It is also known as just Sardo and most authorities categorize Fiore Sardo as the same cheese as well. It is a pecorino-style cheese, like its close relation pecorino Romano, but not as well known outside Italy as the latter (although a good deal of the "Pecorino Romano" exported from Italy is actually Sardinian in origin).
