Panta bhat

Panta bhat (Bengali: পান্তা ভাত) is a rice-based dish consumed in Bangladesh and the Indian state of West Bengal, and in Orissa where it is known as pokhalo. It is especially popular in rural areas. There are many variations of the dish but a common one is made by soaking cooked rice in water overnight. In the morning, the soaked rice is eaten usually with salt, lime and chili. Other curries or fish preparations may also be consumed along with panta bhat. Curd is also often consumed with the dish.

Pokhalo often differs from panta bhat in that seasongs and yoghurt are sometimes added prior to the fermentation process.

Although the consumption of the dish is mostly limited to rural areas, during the Pahela Baishakh (Bengali New Year festival), it is consumed as part of the celebration.
