P. F. Chang's China Bistro

P.F. Chang's China Bistro, Inc. NASDAQ: PFCB is a restaurant chain founded in 1993 offering American Chinese cuisine in an upscale bistro-like atmosphere. The elaborate décor is designed to give the impression of a Chinese village. The chain is based in Scottsdale, Arizona. The initials "P.F." stands for the founder of the chain, Paul Fleming, while the "Chang" is derived from Fleming's co-developer, Phillip Chiang. Main courses include "Chang's Spicy Chicken", "Mongolian Beef", and "Crispy Honey Chicken".

As of December 2005, PF Chang's maintained 133 restaurants in 34 states and 78 Pei Wei Asian Diners in 13 states. Menu items range from $2.95, such as the Hot and Sour Soup, to $19.95, such as the Oolong Marinated Sea Bass. [1] Most of the dishes range from $7.95 to $13.95.

In early 2006, P.F. Chang's added a "Tastes of Sichuan" section to their appetizer menu. This added section contains additional entrees like "Flaming Wontons", "Spiced Chengdu Lamb", and other items available for the first time. Individuals aspiring to try all of the new items at once have the option of ordering a "Night in Chengdu". Once ordered all items that appear on the Sichuan menu were made for the customer and served in a three-course meal style. This extended menu was discontinued in fall of 2006.

Beginning in February of 2007, P.F. Chang's will be doing a new "Tastes of Yunnan" section, and has changed the design of their menus as well. Some entrees with the "Tastes of Yunnan" include the "Dali Chicken" and the "Zodiac Noodles."

  • Pei Wei Asian Diner: started by PFCB in the early 2000s, Pei Wei is a "quick" P.F. Chang's, lacking the formality and full-service of P.F. Chang's, a style known in the industry as Fast Casual.
  • Taneko: In October 2006 the chain will debut its third concept- Taneko Tavern. Taneko's first location will be at the Borgata of Scottsdale and will feature Japanese cuisine (but will not be a Sushi restaurant). The average price point at Taneko will be higher than that of a P.F. Chang's restaurant.
