Oreilles de crisse

Oreilles de crisse is a popular dish in Québec. It is simply deep fried smoked pork jowls. It is generally served at cabanes à sucre (sugarshacks) in spring time, often, but not always, topped with a generous quantity of maple syrup.

The word crisse is the Quebec French profanity word for "Christ". The name of the dish thus literally translates to "Christ's ears".

Contrary to what the name implies, it is not religious in any way, and is not made from ears.
