I'm not 100% sure of policy on this issue, but I can tell you that what I have observed done, and what I have done, is to try to find sources, but still edit in their absence. Sources are generally more important for controversial claims, though if you plan on including more than just a mainstream critique of the institution, you may want to either wait for sources (perhaps a student newspaper?), or not include them at all. Generally, a lack of sources can indicate that a "mainstream" claim may not be mainstream at all. You may also want to address your query to Wikipedia:Help desk. It's easy to remove text - click on the "edit this page" tab, select the part you want to delete, press backspace or delete, click on the "save page" button... presto. But, it's not so easy to rewrite stuff, right? You knew what information was a right, and still decided to delete instead of correcting it. Please, in cases like this, if you don't care to improve the article by applying some writing and stuff, consider an easier option - do nothing. Cheers.
