Moimoi

Moimoi is a Nigerian steamed bean pudding made from a mixture of washed and peeled black-eyed beans, onions and fresh black pepper. After blending them together, its often seasoned with dried crayfish and salt. Some add chopped boiled eggs, flaked fish and other things to enrich it.
It is usually wrapped in moimoi leaves which are similar to banana leaves before being cooked. If the leaves are not available, you could use ramekins and fill them 3/4's full. (Though people have been known to make them in teacups).
