Marmitako

Marmitako in Basque Country and Marmita or Sorropotún in Cantabria is a fish stew that was eaten on tuna fishing boats in the Cantabrian Sea. Today it is a beautiful and simple dish with potatoes, onions, pimientos, and tomatoes. The name comes from the Spanish word for a stewpot (marmita).
Today it is a popular dish, in part due to the increasing popularity of Basque cuisine, and in part because it is one of the best-known ways to prepare tuna, a fish that is now widely prized for its nutritional value. There are also varieties of marmitako that substitute salmon for tuna.
