[edit] Former chef de cuisine

It is noted in a recent news article that the 'former chef de cuisine' of Le Bec-Fin was Peter Gilmore, who now runs "Gilmore's French Cuisine" in West Chester, Pennsylvania (opened in 2001). My understanding is that the chef de cuisine plays a large role in establishing and maintaining the quality of a venue. Other information in this news article includes: the venue is located in an 1890 townhouse; there are 36 seats and two seatings per night.
