Kofte kebab

From Wikipedia, the free encyclopedia

Kofte kebab or şiş köfte is a kebab variant. It consists of minced lamb meatballs with herbs, often including parsley and mint, on a stick, grilled. The food is popular in Turkey,Armenia, and Romania where there are hundreds of versions such as islama kofte, cig kofte, and kadinbudu kofte; and, is usually served with plain rice and a salad.[1]

"Kofte" may be related to "kofta", the common English name for a Middle Eastern food, at its most basic consisting of balls of minced meat mixed with spices or onions, which is in turn derived from the Persian "koffteh".[2] In Armenia, they are called kyufta (singular is identical to the plural).
