Kisiel (Lithuanian: kisielius) is a traditional Polish and Lithuanian dessert made of potato flour, fruit juice, water and sugar. A jelly-like substance similar to legumin, it is one of the most popular desserts of the Polish cuisine. Its name is derived from the old Slavic word meaning any kind of sour substance, as sour fruits are preferred. It is also a common household drink in Russia.
The way to prepare kisiel: first mix water with potato flour and smashed fruits, then boil it. Recently it is also possible to buy instant kisiel. Nowadays most of the Polish households prepare kisiel from instant mixes instead of the traditional way. The most popular flavours are strawberry, gooseberry and raspberry. In Russia the most popular flavours are cranberry, cherry and redcurrant. Cranberry kisiel is a traditional meal of Kūčios (Christmas Eve supper) in Lithuania.
