Kenafa cheese

'Kenafa cheese' is a heavily salt preserved cheese also known as Jibnat Al-Akawi (Akawi cheese)
The process of extracting the salt to make the middle eastern Knafa desert requires the cheese to be boiled several times in clear water to extract the salt. The Akawi cheese is sweet by nature and produces a very fresh, soft cheese when heated. It can also be used as a base for other sweet cheese desserts. It is available in both retail and bulk packages.
