Juustoleipä, or more traditionally Leipäjuusto, is a traditional cheese of the Finland and Lapland regions. It is typically made from either reindeer or cow's milk; however, goat milk can be used. It is made in a standard manner — after the curdling process, the curds are kept and pressed into the desired form. The cheese is traditionally baked or exposed to heat, such as a fire, until the outer layer begins to brown or blacken. This process leaves the inner cheese left soft and creamy and the outer portions crisp, yet not dry. An English translation of the name juustoleipä is "cheese bread" since the final product resembles bread. It is most commonly served warmed, with a preserve, jam, or honey.
