Jangiri

Jangiri is a sweet from South India, similar to the North Indian Jalebi. It is circular in shape and yellow in colour. The sugars used in the syrup coating are partly fermented, which is thought to add flavour to the dish. Jangiri is sold at most of the sweet shops in South India.

Jangiri is prepared by mixing urad dhal and rice in water. The water is then strained and used in the grinding of the urad dhal. This paste form the dough. Food colouring is then added. The syrup is made by heating a sugar-water mixture. The jangiri are produced by filling dough into a cloth with a hole in the middle. The cloth is held over hot oil and squeezed, making the design. After the jangiri have been deep-fried, they are dropped into the syrup, then set out to dry.
