Jaew bong

Jaew bong is a paste made with chilies, lemongrass and other ingredients that is popular in Southeast Asian cuisine. It is eaten usually by dipping sticky rice or a raw/parboiled vegetable in it. It lasts for a long time, does not spoil easily and can be either on the spicier or sweeter side, depending who makes it. Jaew padak is similar and eaten the same way, only its main ingredient is fish. The grey featherback processed fish sold in glass jars in asian markets (usually a Thai brand) is used to make this "paste" at home.
