This is one of his seven SPOON restaurants in the world. Replaced previous French Restaurant, Plume in 2003, which had enjoyed considerable success in Hong Kong in the 1980s and 1990s. The unique interior was designed by New York designer Tony Chi, and features 550 Venetian hand-blown glass spoons on the ceiling as well as an open kitchen and a completely see-through wine cellar, lining the hallway leading to the restaurant.

Modern Japanese Cuisine featuring world famous modern Japanese Chef Nobu Matsuhisa. The interior design is done by David Rockwell. Will be replacing the previous Japanese restaurant, in November 2006.

Authentic Cantonese Cuisine and Dim Sum restaurant.

The Steakhouse, grilling USDA Certified Prime Beef, Australian Waygu Beef, Australian Angus Beef and Canadian Beef. Featuring Hong Kong's only Charcoal Grill and a fine salad bar. Seafood and other meats are also available. Vegetarian options available too.

Situated along the harbour's edge, this International buffet is known for its oysters being opened on demand.

Open throughout the day and night for snacks, afternoon tea and cocktails. Famous for the "Nine Dragon Cocktails". (Nine Dragons is the direct translation for the Kowloon District in which the Hotel is situated.)
