[edit] Ingredients

Giardiniera, which means literally "from the garden", consists of a pickled mixture of serrano peppers, celery, carrots, cauliflower, bell peppers and a variety of spices steeped in an oil vinaigrette.

[edit] History

[edit] Founding

Starting from humble beginnings in a small Chicago deli during the early 1920s, Nick Pasquini began serving his own-recipe condiment on a variety of Italian sandwiches. Soon demand for IL Primo Giardiniera forced him to shut his deli and begin full time production for the retail trade. IL Primo was incorporated in 1930.

[edit] Expansion

In 1985, IL Primo was sold to Mike Natali. Natali immediately expanded into food service, packaging IL Primo Giardiniera in gallon sizes. In 2000 IL Primo was sold to Garden Row Foods, who began national distribution. Today, IL Primo is still produced in St. Charles, Illinois just outside Chicago and is distributed throughout the United States.
