Hoe (IPA: /hwe/), is a Korean dish consisting of thinly sliced raw fish, and other raw seafood. A similar dish is yukhoe (육회, a raw beef dish) or the Japanese sashimi.
The fish is usually dipped in a spicy gochujang-based sauce called chogochujang (초고추장) or wasabi sauce, and usually wrapped in lettuce and Korean perilla leaves. To make hoe more aesthetically pleasing, it is often served on top of a mass of uncooked cellophane noodles.
When a meal of hoe is finished, the restaurant often makes a jjigae (spicy stew) from the fish heads and remaining meat, together with various vegetables.

Hoe is the standard orthography according to Korean romanization rules. Spellings that might better represent the actual pronunciation for speakers of English and other languages includes hwe or hoé.
