Genoa salami

From Wikipedia, the free encyclopedia

Genoa salami is a variety of dry cured Italian sausage commonly believed to have originated in the area of Genoa. It is normally made from pork but may also contain beef, and is seasoned with garlic, salt, black and white peppercorns and red wine. Like many Italian sausages, it has a characteristic fermented flavor.

As with many toponym-denominated foods, especially ones common in the U.S., do not expect to find it in actual Genoa. The well renowned sea-harbour can instead offer you other top-quality seasoned sausages in the form of Salame di Sant'Olcese and Salame Felino, both of which originate in the hilly interior of its province. It is probable that what passes in foreign countries for Genoa salami was somewhat derived from the recipes of one of both sausages though no one contains garlic.

In the United States, sliced Genoa salami is a staple of the "Italian Combo" submarine sandwich.
